Nestled on the 28th floor of The Lalit with 360- degree views of the Capital including Jama Masjid, Red Fort, India Gate, Birla Mandir, Nehru Stadium, Connaught Place, New Delhi Railway Station… OKO has an impressive number of loyal diners… try going there without reservations and I'm sure you'll wait awhile! Presenting a finely curated selection of dishes spanning Japanese, Korean, Singaporean, Vietnamese, Thai and Chinese cuisines, meeting just about everyone's preferences, the restaurant stringently follows 'zero-wastage' and 'we serve what we grow' nutritional philosophies. So, when I was invited to a sushi master class by Chef De Cuisine Suriya, I was pretty stoked!!


Now if you've been reading my restaurant reviews, you might've noticed my love for sushi. While it seems easy to make, sushi preparation is an art involving years of experience. So, the opportunity to observe Chef Suriya rolling out the perfect sushi was a learning curve. "I equate making Sushi with an artist's eye for detail. It requires a mix of precision, delicate hands, and an understanding of aroma and taste. Sushi is one of my favourites for the flavourful punch it packs and yet how light it is on the stomach" he grinned. Overall, the masterclass was interactive and he guided us along the way as we rolled our very first maki. Needless to say, I had an amazing afternoon taking notes on how to improve my rolls from here on, so maybe I'll host a sushi soiree soon!!
