THE HUMBLE KARI GOSHT

I don’t know about Mumbai but Kari Gosht seemed to be the most popular item on the street during Ramzan in Pune. I’d never seen Kari Gosht before coming to Pune and this was a wonderful new discovery.

Irfan bhai has a fruit stall in Shivaji Market around the year and does a food stall during the month of Ramzan selling mostly Iftar Snacks like cutlets, shammi kebabs and the indomitable yet humble Kari Gosht which in this case means stick or skewer that is inserted into sliced beef from the leg part, but sometimes also chicken, and fried. What sets the Kari Gosht apart from other street kebabs? It is the softness and the juiciness!! Very few deep fried non-minced Indian kebabs are so succulent. The secret of the Kari Gosht lies in the physical hammering of the meat. This breaks the muscle fibers and makes the meat tender. The meat is then marinated with salt and spices, skewered in long sticks and coated with beaten eggs and deep fried.
 
Post Ramzan, I’ve tried Kari Gosht at a couple of places but absolutely no good. Making Kari Gosht, I’ve realized is quite an art. Not everyone can do it. Then one day I found Arif Bhai’s stall tucked away in a quiet corner in Kalyani Nagar. It is an evening roadside stall in the middle of nowhere but he seems to know what he is doing, as his is quite a busy stall. He serves chicken, mutton and beef. All his kebabs are cooked on charcoal and are awesome. He sells Beef Kari Gosht only on Fridays and these are in a totally different league. They melt in the mouth and though fried are not oily at all. Masterpieces!
