THE FORCE BEHIND SU CASA

Su Casa is renowned for cilantro cottage cheese, pulled chicken chives bruschetta, aubergine ravioli and smoked duck pizza. In conversation with the man behind the European restaurant's presence in Andheri, Amarjeet Shukla.

 

"To be honest, I have no formal education in Hospitality. I did MBA in marketing but I always dreamt of being a owing a chain of restaurants and hotels someday. I always fanned the flames of this dream and with a lot of effort, have realised it today with Su Casa- Andheri running successfully in Mumbai. It wasn't an easy feat. In the Hospitality industry one can’t say NO and this approach of always saying YES is something that one has to adapt!! To share my own experience, in the early days before letting my staff work on ground, I myself handled all the departments. Every business has its odds and evens which needs to be tackled well; challenges are an ongoing process. And, this isn't an easy industry to crack — you must do your research, be flexible in most situations, create a dream team of polite staff, be patient and finally all will fall into place. My only mantra for a successful show is to focus o customers come what may — treat them as God and they will shower you with blessings!

 

People often ask me what prompted me to open restaurant in Andheri Mumbai. In a country like India, we believe in home food and yet India is a one-stop country that has restaurants serving cuisine from all the countries possible!! So why not European cuisine? Su Casa has a presence in Bandra which has given us good results and Andheri being the Hub for business, social life and an acceptance level which lead me to open Su Casa there with a homely ambience. That said, the hospitality industry is notoriously difficult to survive in. It is judged by people who are using their disposable income and free time to do something they seek pleasure from, so they are definitely less forgiving. My core focus while building this property was being customer-centric, doing justice to the good name that the reputation has built and giving diners to a culinary ride to Europe. My idol is Ratan Tata. I cannot ever be like him but will try to emulate at least some of his behavioural traits which makes him so simple and humble — humility, compassion and patience. Without these tools in your character toolbox, you will find the job a struggle.

 

I have learnt a lot about the culinary experience in these past few weeks. Diners have changed their preference from just Indian food to experimenting with other cuisines but having said, there are difficulties when it comes to completely accepting International cuisine. We, at our kitchen, have always made it a point to keep the dishes light. In fact, due to the diners feedback and demands, some European dishes are tweaked with Indian masala. Moving forward… my goals in this business are to be positive, open more outlets, be known for good work worldwide, expand verticals and keep the icus honed on being customer centric.
