This season, the venue partner is Goa Marriott Resort and Spa so we spoke to General Manager Pranay Verdia about the waterfront resort renowned for its discreet luxury, stunning vista and warmest hospitality.

What are the signature dishes and cocktails in your restaurants and bars? Is there a special menu for IBFW?

Bibimbap, a signature dish of our Pan Asian Restaurant Wan Hao and Murg Tariwala from Waterfront Terrace and Bar are the crowds favourites. Guests also favour Kocum Mojito and Fenitino, delicacies native to Goa—with a twist. Yes, our chefs have a special menu crafted for IBFW.

 

How challenging is the food and beverage segment of the business and how important is it to bring the local community into the restaurants and bars?

Our restaurants and bars in Asia Pacific are driving more and more traffic to their venues; it takes a lot to be different and stay ahead of the competition in a constantly changing environment. Being a five star resort in the heart of Panjim, having locals advocate about our service helps increase our visibility and footfalls, amongst the pool of five star properties in Goa.

 

As you look to 2017-18, what are the key priorities that you are focused on for the property in order to make sure that you retain your leadership position in Goa?
